We switched lots and plots.  The above photo shows where our new house will sit.  It doesn’t look like much now but when it is finished it will look similar to this house, but ours will be blue-grey. 

Darrell is leaving for his two month overseas trip on Monday so we have spent the past few days taking care of things and hanging out together.  Today we made sure we could both use Skype to communicate and found that it works pretty well!

I am glad that he is excited about his trip, I am excited for him too but will miss having him around and also being able to bake and send the treats to work with him.

On Friday I had my one month Lasik check up and found that I can now read the 20/15 line!  Everything is going great and I don’t have to go back for another three months.

Today we had to stop by his office to pick up some things so I brought a bag of marshmallows along to see if the alligators were hungry.  Lucky us, all three of the alligators and the fish were all happy to greet us!

Oh and Halloween is coming up!  I think that DeadSpider’s bewitching jars full of creepies are an awesome idea!

This was my final cake for Wilton Course 4: Fondant & Gum Paste. The fish was carved out of three frozen 9×13″ cakes and is a little too tall. This is not the standard final cake for this class but all of the cakes in the book were beyond lame.

On Friday my boss surprised me by sending me home two hours early so I made a monsterwreath to hang on my door for Halloween.

We hung out at the mall on Saturday after visiting the Apple store, book store, craftstore and bought some candy hoping to sneak it into a movie. By the time we got to the movie theater there was nothing playing until much later. I tried to eat my candy in the car so it wouldn’t melt while we wandered through Costco but it was no use, my chocolate tuttle could not be saved.

Today we had a nice lunch at Barbara Jean’s and decided to look at some other floor plans of the homes available in the subdivision we are looking to build. The builder’s website listed these new floor plans at too good to be true prices and Darrell mentioned them to me because he knows I am not crazy about the one we had previously settled on. It turns out that the website is mistaken but it is possible to build some of these homes on some of the lots, but for the most part the prices are incorrect and they will not honor their goof. After driving nearly to Georgia, well at least it felt that way, we got to see these two floor plans and decided that the Coventry would suit us better than our current selection of the Princeton so we are in the process of pricing the difference before Darrell leaves the country. ugh.

My last night of cake class ever is tomorrow. I am making a goldfish shaped cake.

I took a fall themed cupcake class last night taught by my talented Wilton instructor Muffy where we made lots of cute critters.  This opportunity also gave me the excuse I needed to make Chocolate Chip Cookie Dough Cupcakes!  These tasty cakes seem to be Darrell’s new favorite.  While they were easy to make, several of them had holes in the center because of the frozen cookie dough and were also very flat on top, but once you cover the craters with icing no one is the wiser.

Darrell is looking forward to his overseas trip and I am looking forward to his return so we can go on vacation!  We are going to go to Playa del Carmen again for the third year in a row, this time in December rather than August or July.  I can hardly wait to stay at our little hotel on the beach and relax!

Also,  its been over a month since I had Lasik and my eyes are terrific!  I can see great and I feel fantastic :)   If you live in Jacksonville/Northern Florida and are thinking of having Lasik please go see Dr. Maida.  He isn’t cheap but he does great work and his office staff includes nice, friendly, competent ladies …unlike Dr. Bowden’s office (they didn’t seem to know what was going on and did not make me feel good about trusting them with my vision.  They suck.)

This week we celebrated Darrell’s birthday a month early since he will be away for his real birthday. We went to Ruth’s Chris Steakhouse for the first time and I was excited to see several dolphins from where I sat, swimming in the river. The food was good too but next time I would like to just have creme brulee for dessert and watch for dolphins.

I also made something I had never heard of before: Shoofly Pie. This was a special request from one of Darrell’s co-workers who unfortunately did not come to work on the day it was brought in. To me this pie did not smell good or look good but Darrell’s co-workers seemed to like it.

I really need to buy an apron.

20/20

I had the hardest time finding where I could donate my unused contact lenses but thanks this thread I learned of a place that would take them. I donated three boxes of unopened contacts to MADRE and I donated my glasses to a local Lions Club while at my follow up Lasik appointment on Friday.

At my appointment my suspicions were confirmed… I now have 20/20 vision and Darrell can still see better than me! Yay!
