
Last weekend we went to the Jacksonville Zoo and had a great time seeing all of the animals and walking around.
I love to eat fruits and veggies that are in season so we also visited the farmer’s market to get some more tomatoes since I have been eating a diet of mostly tomatoes, fresh mozzarella cheese, olive oil and balsamic vinegar. I also got two seedless watermelons, cucumbers and some peaches.
Since we were already near downtown we ate a yummy lunch of tuna steak and salmon BLT (minus the B) at the River City Brewing Company. We had been to this restaurant once before when we had visited Jacksonville in December but had only eaten fish and chips in the bar after visiting MOSH. This time we ended our meal with a tasty Snicker’s pie which is not to be missed if you visit! Speaking of food, we found a new place in our area for dinner called Cedar River Seafood. We had a broiled seafood platter which included fish and scallops as the highlight, also the hush puppies. great!
Recently, I have been making my own yogurt for smoothies, marinating Darrell’s chicken, yogurt cheese and just to eat. There is something so ‘earth mother’ about it! I know that you don’t need a yogurt maker but I bought one anyway because I don’t trust making it with a heating pad or thermos. I recently posted my recipe on Bakespace for home made yogurt. We also spent the weekend looking at kitties and puppies and bought the Let Meow’t cat door. I’d really like a black lab but I think Darrell is trying to pacify me with a kitten or two. I figure if we end up getting a puppy, it’s better to get one now while we are in our apartment rather then when we have our own house and carpets. Plus Darrell will be traveling a lot for work and I would feel less lonely and much safer with a dog.
Later this week Darrell is traveling out of town to take some people camping so we won’t be traveling far, if at all, for the fourth.
