bye bye brownies

Today I made my last batch of brownies for my co-workers.  I had been making these brownies at least monthly, sometimes weekly for several years.  I even made them for Rookie O for awhile. There is nothing special about them, they aren’t even really home made or my favorite.  Actually, they are from a box and I only add the egg, oil and water.  

I made my first batch for my co-worker, Phil, when I was still in Support.  This started a whole baking spree for Birthday’s at work for the people on my team and gave me the opportunity to make some really yummy and creative treats for their Birthday’s such as the Kitty Litter cake for Ian, angel food frosted with marshmallow crème and topped with sprinkles, Lakers colored cupcakes, puppy chow, cookie crack, cheesecake, BtSC, Celebration Cake and various other goodies.  Thankfully I love to bake and enjoy celebrating my co-worker’s birthdays with a homemade treats that are unique and special, just like them! 

 It’s going to feel funny not baking sweets as much but I hope that I will be able to focus that energy and spend some time perfecting my bread making skills.  I purchased a few cook books full of beautiful bread recipes and am eager to attempt them.  

I also have one more week of work before we leave for Florida and I start to work remotely; now that is going to feel really weird.

Winter Wallop

Today is cold and icy in normally sunny San Antonio.  Like an idiot I went to work, at least now I know that ‘use your own judgment’ really means ’stay home’.  Anyway, my friend James wrote a poem that is somewhat fitting with the chilly air so I thought I would share it:

On Day and Night

And as the neighbors’ guests retire, coaxing their cars
into the snow (we’re gazing through the curtain
into winter’s pale hub), two girls gaze up. They’re all
going home, like wheels correcting
into steering hands, or drawn breath returning to the air,
but you can’t come back to anywhere—there’s no perfect here
and there, or now and then—but here we are,
again. A silverfish crosses the windowpane. We peer
into the street, and up at the stranded moon. White wheel,
black field. Black winter, white road. White silence,
black wind. White cars, black wires.

Cookie Crack

I am continuing my effort to eat my way through the pantry and limit my shopping of groceries so that I won’t have to throw out/donate so much food once we move.  So, today I picked up some butter and made some of my famous Cookie Crack.  It’s called Cookie Crack because it is so good you just can’t stay away from it!

Cookie Crack

• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 cup (2 sticks) butter or margarine, softened
• 3/4 cup granulated sugar
• 3/4 cup packed brown sugar
• 1 teaspoon vanilla extract
• 2 large eggs
• 2 cups (12-ounce package)  Semi-Sweet Chocolate Morsels
• 2 cups (12-ounce package)  Butterscotch chips
Directions:
Preheat oven to 375° F.
Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate and butterscotch chips.
Grease 9 x 13 glass baking dish. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.
